Advocaat cake




Ingredients:
Sponge cake:
4 eggs
1 cup of sugar
1 cup of flour
1 teaspoon of baking powder
1 tablespoon of vinegar
Cream:
2 cups (1/2 litre) of 30% cream
1 white chocolate (ca 3-4 ounces)
1 cup of advocaat
2 powdered creams
1/2 cup (10 dag) of walnuts
Decoration:
desiccated coconut

Directions:

Whisk white and add sugar. Still whisking add yolk. The add flour, baking powder, vinegar and mix it all. Pour the dough into buttered baking tray and bake for about 25 min in 240 degrees F (170 degrees C). Cool it down and divide into two halves. Crumble one half of the sponge cake.

Whisk the cream, add powdered creams" - still whisking. Add cooled down chocolate (previously melted). Having done this, pour gently advocaat. Divide the mass into two halves. Add the crumbled sponge cake together with the chopped walnuts to the first half of the mass.

Soak the second half of the sponge cake with advocaat flavoring. Put the mass with crumbled sponge cake and walnuts on the sponge cake and cover it with the second part of the mass. Sprinkle the surface of the cake with desiccated coconut. Cool down in the fridge.

You shouldn't boil or fry it too long because it is likely to loose its specific flavour. Remember, if you will overcook it, it may becomes bitter.
