"Under eiderdown" cheesecake




Ingredients:
Cake:
1 cup of flour
1/4 cup (5 dag) of butter
1 egg
2 tablespoons of sugar
1 teaspoon of baking powder
Cottage cheese mixture:
2 pounds (1 kg) of cottage cheese
1 cup of sugar
2 eggs
1 cream powdered custard
Custard mixture:
2 cups (1/2 l) of milk
1 cream powdered custard
4 tablespoons of sugar
1 cup (20 dag) of butter
4 eggs

Directions:

Mix flour with butter, egg, sugar, baking powder and make cake. Roll. Put into greased form (dimensions 10x14 inches - 25x36 centimeters). Melt cottage cheese with sugar, eggs and powdered cudtards. Mix. Put on cake in form.

Boil custards, then add butter and yolks. Mix. Cool it down. Whip whites and add to custard’s mixture. Mix gently. Pour on cottage cheese mixture.

Put cake into oven and bake 60 minutes in 390 degree F (200 degree C). After baking cake must be in oven as along as will cool down.

1 cream powdered custard means 1 box (about 1/3 cup - 6 dag) of custard powder. In this recipe we use plain flour.

You shouldn't boil or fry it too long because it is likely to loose its specific flavour. Remember, if you will overcook it, it may becomes bitter.

Garlic should be added into dishes at the end of its preparation.
