Walnut cymes




Ingredients:
Sponge-cake
6 eggs
1 cup of sugar
1 1/3 cup of wheat flour
1 teaspoon of baking powder
almond aroma
Apple filling:
1,5 pounds (75 dag) of apples
4 tablespoons of sugar
3/4 teaspoon of cinamon
Walnut filling:
1 cup (20 dag) of walnuts
3/4 cup of milk
2/3 cup of butter
1/2 cup of powdered sugar
Decoration:
Chocolate glaze

Directions:

Froth glairs, add sugar and froth still. Add yolks and froth. Add flour and baking powder. Mix gently. Pour pastry into greased form and bake for 25 minutes at 340 degrees F (170 degrees C). Cool and cut into 2 parts. Drip with water with almond aroma.

Peel and grate apples. Add sugar and cook stew for 20 minutes. Cool, add cinamon, put on the first flan. Cover with the second flan.

Mill the walnuts, pour with hot milk and cool. Grind butter with sugar adding walnuts. Put filling on the second flan. Glaze wioth chocolate.

You shouldn't boil or fry it too long because it is likely to loose its specific flavour. Remember, if you will overcook it, it may becomes bitter.
