  • 2 cups old-fashioned rolled oats not quick oats
  • 1 cup milk dairy or non-dairy
  • 2 large eggs
  • 2 cups apples, cored and diced Honeycrisp or Gala preferred
  • 3 tablespoons maple syrup or honey
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1 handful optional toppings chopped nuts, raisins or brown sugar

Method
 

Preparation
  1. Heat your oven to 350°F (175°C) and grease an 8-inch square pan.
  2. In a bowl, whisk the milk, eggs, maple syrup, vanilla, melted butter, cinnamon, baking powder, and salt.
  3. Stir in the oats, then fold in the diced apples and any optional add-ins.
  4. Pour the mixture into the pan and spread evenly. If you like a golden top, scatter a teaspoon of brown sugar over the surface.
  5. Bake for 30 to 35 minutes until the edges look set and the center is just a little soft.
  6. Let it rest for 10 minutes before cutting. Serve warm with a splash of milk or a dollop of yogurt.

Notes

Store leftovers in an airtight container; refrigerate for up to 5 days or freeze for up to 2 months. Make substitutions for milk and sweeteners as needed.
