Preparation
- Preheat your oven to 350 degrees F. Grease a 9 by 13 inch baking dish.
- Cook the chosen meat until browned and crisp, then sauté onions and peppers until softened.
- Spread the hash browns or bread cubes in the prepared dish.
Mixing
- In a large bowl, whisk eggs with milk, salt, pepper, garlic powder, and paprika until smooth.
- Sprinkle half the cheese over the base layer, add the meat and veggies, then pour the egg mixture over everything.
- Finish with the remaining cheese on top.
Baking
- Place the dish in the oven and bake for 40 to 50 minutes. Look for a golden top and set edges.
- Let the casserole rest for 10 minutes before slicing.
Storage
- Assemble the casserole the night before, cover, and refrigerate overnight. Bake in the morning as directed.
- Leftovers can be refrigerated for up to 4 days or frozen for up to 2 months.
Notes
For a lighter casserole, try using turkey sausage, and load up on vegetables. Adjust cooking times based on the depth of your dish.
